Continue Reading ›I promised the guests at our party last sunday to post the recipe for the carrot cake I made. ( I threw my husband Patrick a surprise party, it was so fun!) Seriously this cake was the best I've ever had, and I had more than one person agree with me. It was very flavorful and moist, just divine. I will post the link and tell you what tweaks i made to the recipe.
The link is here. I tryed it because it said "the best carrot cake ever" and somehow I knew I could trust that statement. So, I replaced the eggs with egg replacer ( En R G kind) , took away 1/2 cup of the white sugar, added about a t of baking powder, a bit more cinnamon, and some fresh nutmeg. oh and I
used pecans instead of walnuts. The other thing I will say is to be careful of how juicy the carrots get when you let them sit with the brown sugar. If they are really juicy you may want to strain a little liquid out so the cake isnt toooo moist. Use your judgement. Anyhow, I dont think you can go wrong..seriously this was INSANELY good. Whip up some easy cream cheese frosting with maple syrup and a little powdered sugar...taste test it for preferred sweetness!.....ENJOY!]]>
Pourable sunshine?! Salad Cream? Has anyone tried this product?Sounds too good to be true. We found this last night along with many other international treasures at our local Albertsons. We can walk to like every imaginable store you can think of. Before we went there we went to the Good will where Patrick bought me a yellow hat and I purchased some awesome African fabric for $2.99. Then we discovered the most amazing dollar bookstore you have ever seen -- A GOLD MINE I tell you. Then we wandered into the grocery store just to see what they had. We like to just wander the aisles and read labels. Its really kind of absurd. I wasn't even hungry which is very strange.
Then we walked home and gorged on smelling night blooming jasmine. When you stick your face into the clusters of blooms and inhale its like nothing bad exists in the world and you are in olfactory heaven. We picked some blooms and put them by the bed and inhaled the sweetness all night. Some day we will plant that amazing vine all around our cottage on the mountain top. I made these biscuits last night, I used this recipe here as my guideline, because it was the only one I could find that didn't use a ton of butter and buttermilk and cream.. I was so pleased that they turned out so good, light and flaky and full of flavor. I could eat these biscuits everyday.

Creative Delicious Fairly Healthy Biscuit Recipe
2 cups flour ( feel free to experiment, as long as most of the flour is wheat. for example i used 1/2 c besan flour last night)
2 1/2 t baking powder
optional - 1 t garlic powder/ 1 t paprika/ 1 T chopped fresh rosemary (or 1 t dried) or other tasty herb
1/2 t salt
1/2 t mustard ( any kind, but i like Dijon)
3 T butter
2/3 c cheese ( mix it up! i used a combo of Swiss and Parmesean last night, next time i'm using a sharp cheddar)
3/4 cup milk ( a maybe a pinch more when your rolling the dough , feel it out) ( oh ya and a bit to brush on the tops before you bake)
Preheat oven to 400
Mix dry ingredints well. Cut the butter in, i like to used 2 butter knives for this and just work t into the flour mixture.
Then add the cheese, mustard and milk, mix until it forms a dough, then turn out onto a floured work surface and knead it a bit. Depending on the type of cheese / flour you used you may need to add more milk or flour, so just adjust accordingly. roll out 3/4 inch thick. Break out the cookie cutters and make heart or animal shapped biscuits, or jus use a small glass upside down to make circle biscuits.
place on a lightly buttered pan ( i just ran a stick of butter over the surface), and brush the tops with milk ( used a tiny bit on each and just used my finger to spread. easy)
Set the timer for 12 minutes. Check the biscuits then for the perfect golden color. It may take up to 17 minutes. Stand there and wait for them eagerly.
Serve at once and try to leave some for later too! You'll be glad you did!]]>
